For over 45 years, Woodcock Smokery has been guided by a simple belief.
We support the traditional practice of wild fishing in Ireland. It is a belief that has shaped every decision Sally Barnes has made since establishing the smokery in 1981, and it remains at the heart of everything we do today.
Working with nature is rarely the easiest path. Fish runs change. Weather shifts. Rivers, lakes, estuaries, and oceans are constantly evolving. Some seasons bring abundance, while others remind us of the delicate balance that exists between people and the natural world.
But we believe food should be connected to place, season, and nature. We believe healthy rivers, thriving oceans, abundant wildlife, and resilient fishing communities matter.
That is why Woodcock Smokery has always chosen to work with wild fish and does not use farmed fish.
Sustainability is not something we added to our business. It has been woven into the fabric of Woodcock Smokery from the very beginning.
Our Fish
Woodcock Smokery is the only smokery in Ireland dedicated exclusively to smoking wild fish. This commitment is about far more than flavour, although flavour is certainly part of the story.
Wild fish are shaped by the waters they inhabit, the seasons they migrate through, and the natural ecosystems that sustain them. Every fish tells a story of place.
By working with wild fish, we remain connected to Ireland's rivers, lakes, coastline, and fishing communities. It means accepting the realities of seasonality and availability. It means recognising that nature ultimately decides what is available and when.
Some years bring plenty. Others bring less.
Rather than trying to force nature to meet demand, we choose to work within its limits.
This approach allows us to produce food with integrity while supporting a food system that has sustained people, wildlife, and coastal communities for generations.
Preserving Traditional Skills
Sustainability is not only about protecting natural resources. It is also about protecting knowledge.
For decades, Sally Barnes has dedicated herself to preserving traditional fish smoking techniques that might otherwise have disappeared. Her work has inspired chefs, fish smokers, producers, students, and food enthusiasts from around the world.
Through courses, workshops, demonstrations, events, and informal mentoring, Woodcock Smokery has become a place where traditional skills are shared and celebrated.
Visitors travel to West Cork not simply to buy smoked fish, but to learn about smoking, fishing, foraging, food preservation, and the deep connections between food, landscape, and culture.
We believe these traditions matter. They form part of Ireland's cultural heritage and deserve to be passed on to future generations.
Using More, Wasting Less

We are continually exploring traditional preservation techniques and new ideas that allow us to use more of what nature provides.

Alongside our commitment to wild fish and traditional skills, we are continually looking for practical ways to reduce our environmental impact.
