Having been born and raised in Scotland, Sally Barnes has a great love for smoked white fish. Hake is a beautiful mild-flavoured, abundant fish.

Whitefish have a low-fat content and are very traditional in a northern European diet. Their flavours tend to be more delicate, and most lend themselves to a gentle, cold smoke.

We love it in a simple risotto with garden peas and mint and lots of Mascarpone and Parmesan or an Irish farmhouse cheese like Kylemore (Galway) or Coolea (Cork). Check out some of Sally’s recipes here >

  • Weather conditions and spawning season dictate the availability of wild fish throughout the year.

  • If fish is not available for purchase on our website, sign up to receive notifications when it is.

  • As we deal with wild fish and cannot ask the ocean for specific sizes, the average weight of the pieces sent out will be 300 grams - if it’s a little bigger, lucky you!
