Cold smoked over beech wood fire, this traditionally cured wild Salmon is unlike farmed salmon.
The texture is firm and buttery, with no “fishy” taste. No need to serve with lemon.
Caught in the south of Ireland by traditional 5th generation Salmon fishing family, just as they head upriver from the ocean, they are at their absolute best eating. With full belly fat, bright, silver scales and torpedo like form, they have not yet begun to expend energy by morphing into river fish as they are fresh from their epic Atlantic adventure.

The fish are from the wild and each piece is cut by hand so may be slightly over or under by around 10g, much as it would be from purchasing a piece of cheese from the cheesemonger.
