Kippers, mustard mash, poached egg and red onion marmalade

This is a winter dish that is the nuts.

Mustard mash: peel, boil, drain and mash some potatoes. Add some butter and cream to the mix and some mustard. I prefer to use a smooth wholegrain or english just one that is not vinegary.
Red onion marmalade: Finely slice red onion with the grain. Fry these very gently in a butter, light olive oil and some sugar until very soft. I usually add some red wine early as the moisture this steams off and leaves a nice sticky mix. If you really are a sweetie add some red currant jam into the mix.
Kippers: heat these lightly in a pan they should only be heated through and not dried out
Poached egg: well nice and runny

Plate it up: a dollop of mash with two kipper fillet drapped over with the poached egg on top. Add few spoons of red onion in little piles around the plate. This all needs to be hot so get it down quickly.
