Tuna is cooked and ready to eat. It can be crumbled over a pizza; over a green salad with olives (as in ‘Salad Nicoise’) ; stirred through cooked pasta with crème fraiche, capers and sliced spring onion; mixed through a butter-bean salad with a good vinaigrette and fresh herbs (parsley, dill, or sorrel); mashed with yoghurt or crème fraiche to make a pate, and capers can be added to taste.

Hot-smoked Sprats are ready to eat as they are, with crusty bread, green salad, and beer.
As an alternative, they can be heated in a pan with a little butter, and, when hot, sprinkle with a teaspoon of brown sugar and a teaspoon of balsamic vinegar. Shake the pan to distribute the flavourings, and serve with crusty bread.
They can also be reheated on the barbeque for a few moments.
